About the product: The fill date for Jay and Maddie’s barrel was 05/22/2024. Technically this of course could be prescribed as an anejo, but this is a 15 months and 28 days reposado. We specifically bottle our single barrels at 95 proof as this is the exact “in-between” of our regular reposado at 80 proof and our high-proof reposado at 110 proof. Moreover, it is an homage to our distillery partner’s founding year, 1995. NOM 1068, Agroindustria Guadalajara, recently celebrated their 30th anniversary in October as well, the same month in which Jay and Maddie’s barrel was harvested.
The barrels are 3rd use Tennessee whiskey barrels. The first use being Tennessee Whiskey, the second being our anejo for 22-24 months, and the third use being reposado, for those light hints of oak, sweet spice, honey, and caramel. Still very agave forward, these single barrels are proofed similarly to our other offerings using forced evaporation via oxygenation over the course of approximately 19 hours and at four degrees Celsius.
