This small batch of "Maguy de Pulque" is just the second time that young mezcalero Eduardo Lalo" Pérez Cortés of El Nanche, Oaxaca has produced a spirit from this agave variety. Lalo harvested this massive agave Americana in his childhood backyard, then roasted it in a conical oven with oak firewood for seven days. After cooking the agave, Lalo, along with friends and family members, chopped the agave into small pieces with a machete, and then mashed them with large hammers made of mesquite in a wooden trough.
Once mashed, Lalo allowed the mash to dry-ferment for a day in a cypress sabino tank, and then an additional seven days with well water. Once he determined that the fermentation was complete, Lalo then double-distilled it in a copper alembic-style still at the small family palenque in July 2025. 46 total liters produced. Adjusted with heads, hearts and tails by Lalo, and bottled in January 2026 for the mid-Alantic.
