LOCATED IN A PLATEAU NORTHWEST OF LOS ALAMBIQUES SITS RANCHO LA MESA, SITTING AT 2,200 METERS (7,217 FT) ABOVE SEA LEVEL. DESPITE ITS NAME, THE TERRAIN HAS A SLIGHT PENDANT TOWARDS THE SOUTH WITH PLENTY OF SUN EXPOSURE. ITS SLIGHTLY SANDY FERTILE SOIL IS CALCIUM-RICH WITHOUT THE PRESENCE OF STONES OR ROCKS, MAKING IT IDEAL FOR AGAVE GROWTH.
WITH JUST OVER 100,000 FULLY MATURE AGAVE PLANTS GROWING IN SEVERAL FRACTIONS OF THE RANCH, THE HARVESTED AGAVES HAD AN AVERAGE WEIGHT OF 33KGS (~72 POUNDS) AND A 29% SUGAR CONTENT.
The agave plants are hand-harvested at peak maturity, cooked in traditional ovens, fermented with wild yeast in open-air wooden vats, and twice-distilled in copper pot stills. As a reposado, this expression is rested in ex-American whiskey barrels for a moderate period (traditionally 8 weeks and 8 days for Ocho's standard reposado), though the specific 2025 La Mesa edition may see slight variation.
