This small batch of agave "Verde" (likely a. Atrovirens) is just the fourth time that young mezcalero Reynaldo Alejandro has produced a batch of destilado from this agave varietal.
Reynaldo traveled to the highest part of Santa Catarina Albarradas, Oaxaca to harvest 2 massive Verdes, and then trucked them back to his palenque, where he roasted them with encino oak, and used willow leaves as insulator, in an underground oven for ten days. After the roast, friends and family helped him crush the cooked agave with wooden mallets, and then allowed that mash to ferment in a single stone tank with well water and "encino de agua" bark for four days.
At that point, he determined fermentation was complete, and with the help of his wife Rosa, double-distilled the mash in a set of eight clay pot stills at his palenque, "La llusión." Distilled and proofed with heads and hearts in May 2026; 82 total liters; 76 liters bottled in August 2026 for Seelbach’s Drammers, & AllView Liquors
Flavor Profile:
Profile opens up with sweetened coffee on the nose, followed by citrus pith, and crisp, bright bell pepper.
The palate is velvety, viscous and consistent with the nose, with notes of salted coffee, torched peppers, cured meat, smoked paprika, and hints of extinguished smoke & delicate sea salt lingering through the finish.
