Master Distiller: Dos Hombres brought legendary maestro tequilero Julio Cova out of a 40-year retirement to oversee production and craft the flavor profiles.
Agave: 100% Blue Weber agave harvested from the valley region of Jalisco.
Cooking (Hybrid Method): To strike a balance between traditional rich sweetness and modern crispness, the agave piñas are slow-cooked using a split method: 75% in autoclaves and 25% in traditional brick ovens.
Extraction: The cooked agaves are crushed using a standardized mechanical roller mill.
Fermentation: The extracted juice undergoes an unusually long, open-air fermentation lasting 72 to 96 hours in open vats, allowing native environmental yeasts to influence the flavor profile.
Distillation: The mash is double-distilled using stainless steel pot stills built with copper components for targeted sulfur reduction and refinement.
Flavor Profile:
The nose is soft with notes of cotton candy sweetness, toasty agave, and wafts of ground pepper spice.
The palate is velvety and light , featuring pronounces notes of cooked agave, mint, black pepper, bright orange peel, and green tea leaves with a long, clean, buttery finish.
