Single Batch hand selected by PLDC. This destilado de agave is a naturally fermented Espadin that is then double distilled in a clay pot. During the second distillation, the still is filled with corn farmed on the property. Post distillation the batch was slightly proofed down with spring water and some of the tails from the run. The introduction of corn gives this batch a touch of sweetness that beautifully balances out the earthy notes you get from the clay distillation.
