Our production process is rooted in traditional methods, executed with precision and restraint. Agaves are transformed through wild fermentation and carefully monitored double distillation, where precise cuts separate the heart of the mezcal from the heads and tails. Rather than relying on heavy smoke to define the profile, we intentionally limit smoke exposure, allowing agave, fermentation, and water to lead.
The result is a mezcal that is clean, expressive, and true to its origin, one that reflects both the land it comes from and the deliberate choices made at every stage of production.

Flavor Profile: This Espadin expression is a lovely introduction for newer mezcal drinkers that want less of the anticipated smokiness that most Espadins are known to have.

Nose: The nose is delicate white pepper forward, followed up by hints of cotton candy dust and lemon pith

Palate: The palate leads in with cacao and wet rock, followed by light wafts of campfire smoke and more of that ground white pepper. The finish is long and mineral-forward with that initial wet rock note evolving into a light sea spray.
